Rootbeer Float Cupcakes

Light with a rich aftertaste just like a real rootbeer float. A not as messy option as Floats can be to give to miniature people with tiny hands that like to make messes. Though, messy in its own way as everything is you give to children.

 I topped mine with a cherry and hot fudge so I guess it's more like a sundae than a float but either way it was delicious.


Root Beer Float Cupcakes

makes 12 cupcakes

1 1/4 cups all purpose flour

1/4 cup dark cocoa powder

1 1/4 teaspoon baking soda

1/2 teaspoon salt

3/4 cup dark brown sugar

2 egg

2 teaspoon vanilla extract

3 teaspoons root beer concentrate

1/3 cup root beer

1/2 cup + 1 tablespoon heavy cream

1/2 cup butter, melted

2 tablespoons sour cream

Preheat oven to 350 degrees.

In a bowl, mix egg and sugar until smooth. Add butter, cream and vanilla, and mix until just combined. Stir in sour cream. Sift all dry ingredients together and add to wet mixture. Be sure not to over mix. Add root beer concentrate and root beer. Mix until batter is smooth. Line a muffin tin with liners and fill each about half way. A heaping 1/4 cup measure should do the trick. Bake for 15-18 minutes. Let cool before frosting.



Vanilla and Root Beer Frosting

1 1/2 sticks butter, room temperature

4 cups powdered sugar

2 tablespoon vanilla extract

2 tablespoons milk

1/4 teaspoon root beer concentrate

Cream butter until smooth. On low speed, add powdered sugar one cup at a time, increasing speed after each addition to bring the frosting together. Add milk and vanilla extract and beat until smooth. Remove most of the vanilla frosting, till you have about 1/3-1/2 cup left in the mixer. Add root beer concentrate to remaining frosting in the bowl and beat until mixed through.

Prep two pastry bags and fill one with vanilla frosting and the other with root beer frosting. Once the cupcakes have completely cooled, fill each one with root beer frosting by either putting the tip of the pastry bag in the cupcake and squeezing some into the cupcake or using the end of a wooden spoon to create a hole. Be sure not to make the hole all the way to the bottom of the cupcake otherwise when you take the liner off you'll have a mess on your hands. Top with the vanilla icing and leave it at that or add a cherry or hot fudge or any other yummy thing you can think of to add to these delicious cupcakes.
